| VEGETABLE BIRYANI 2 cups Basmati Rice 1 cup Mixed Vgetable (cauliflower, potato, carrot, french beans) 150 gms Green Peas 3 Finely Sliced Onion 2 Finely Sliced Green Chillies Salt to taste 1 tsp Red Chilli Powder 2 tsp Cinnamon(dalchini), Caraway Seeds(zeera) 4 Cloves (laung) 1/2 tsp Black Pepper Powder 4 Tomato 1/2 cup Yogurt (curd) 4 tbsp Vegetable Oil 1/2 tsp Mustard Seeds 3 tbsp Dry Fruits (cashew nuts, raisin) How to make vegitable biryani : Wash the basmati rice well before cooking.Then take rice with 3-3/4 cup water and a little salt added to it and 2 tbsp of dry fruits.Cook it in pressure cooker or in a pan or microwave. Cut all the vegetables into small thin pieces and fry each one of it separately in oil. Fry the green peas also. Take 1 tblsp oil in a pan and add mustard seeds, green chilli, cinnamon and caraway seeds powder, cloves, black pepper powder and stir for about half minute. Then add onions and saute them for a minute ot till they get pink in color. Add salt and red chilli powder and stir. Add fine chopped tomatoes and fry till they are properly cooked. Take the yogurt and make it fine by putting in a blender for just 2 rotations. Add this fine yogurt and stir well.Heat it for about 10 seconds. Add all the fried vegetables. Add the cooked rice and mix well with very light hands so that the rice grain doesn't break. Cook for about 3 minutes. Take this vegetable biryani out in a rice serving dish. Garnish with dry fruits and green coriander leaves. Serve the vegetable (veg ) biryani hot with raita and pickle. | |

| bannana fry (pazhampori) Ripe Banana 4 split in to 2 halves Rice powder 1 cup Maida ½ cup Turmeric powder ¼ teaspoon Oil 500 gm Sugar 3 teaspoon Salt to taste Prepare a thick batter with rice powder, maida, turmeric and sugar with water (Similar to the batter for dosa). Heat the oil in a pan and dip the banana pieces into it and fry. When it becomes slightly brown in color, take out and let the oil drain out. | |

| Fish in banana leaves
6 slices - pomfrets 6 pieces - banana leaves
1/4 - coconut grated 1 bunch - coriander leaves 4 - green chillies 1 - onion 1" piece - ginger
(all the above 5 grind to paste)
1/2 t.sp - sugar 3 tb.sp oil
juice of 1 lime table salt to taste
Sprinkle salt on fish and leaves aside for 10 minutes. Mix the ground paste with lime juice, sugar, salt and oil and apply on the fish. Cut the leaves into squares and drip in hot water to make them pliable. Grease one side of the leaf and wrap each slice separately and secure with a string. Heat 1 tbl.sp oil in a frying pan and arrange the slices in it. Cover and cook over gentle heat for 10 minutes. Turn over and cook again for 10 minutes more. This could also be steamed or baked. | |

| Prawn Pakoda1 cup - big shelled prawns 1/2 cup - gram flour 1 t.sp - chilly power salt to taste for garnishing - onion rings, coriander leaves Salt prawns and keep aside. make thick batter with above ingredients and water. Dip the prawns in the batter and deep fry. Garnish with onion rings and coriander leaves.

| Chicken Biriyani
1. Basmathi Rice – 4 cups 2. Chicken – 1 kg 3. Curd – 1 cup 4. 4 nos Sawala - cheruthayi arinjath 5. 2 inch piece inchi - cheruthayi arinjath 6. 20 nos pacha mulaku - chathachath 7. 2 table spoon Perumgeerakam - podichath 8. 10 alli Garlic - chathachath 9. Manjal po.di – ½ tea spoon 10. Uppu pakathinu
Chicken cheriya kashanangalakki, thairum, uppum, manjal podiyum cherthu one hour vaykkanam. Idaykku onno rando pravasyam spoon kondu ilakkuka.
Vellam nannayi thilappicha shesham, rice ittu veendum nallapole thilachu varumpol (not more than 5 mnt) varthu vaykkuka.
Oil choodakki, sawala, inchi, garlic, green chilli enniva nannayi vazati, podichu vacha perumgeerakavum cherthu mootha manam vannu kazhiyumpol, mix cheythu vachirikkunna chicken cherthu cheriya theeyil vevichedukkuka.
Chicken venthu kazhiyumpol, kashanangalum, gravyum separate cheyyuka. biriyani undakkunna paathrathilekku kurachu gravyozhichu, athinu mukalil kurachu riceum, athinu mukalil chicken piecesum nirathuka. Angane kuresseyayi chicken piece & rice nirathi baakki varunna graviyum ozhichu, pathram adachu cheriya theeyil choodakkuka. 15 mnt kazhiyumpolekkum biriyani is ready to serve.
Ishtamullavarkku, slice chytha sawala & cashew nut, gheeyil deep fry cheythu biriyani alankarikkam. | |

| Vegitable Fried Rice
1. Basmathi Rice – 4 cups 2. Green Peas – ½ cup 3. Carrot – 1 no. 4. Capsicum – 1 no. 5. Cabbage – ¼ piece 6. Cauliflower – ¼ piece 7. Beans – 10 nos 8. Pepper powder – 1 tea spoon 9. Salt 10. Ghee / Oil (2 eggs – ishtamullavarkku mathram)
Boil rice not more than 5 mnts & drain.
Cut vegitables into small pieces.
Oil choodakumpol, mutta pottichu ozhichu green peas cherthu ilakkuka. After 2-3 mints put all vegitables together. Pacha manam marumpol kurumulaku podiyum, saltum cherthu veendum ilakkanam. Athinu shesham rice ittu nannayi mix chythu adachu vachu cheriya theeyil 10 to 15 mints kazhiyumpolekkum fried rice ready.
Egg ishtamillathavar oil choodakki green peas + vegitables orumichu ittal mathi. Egg cherthal rice alpam crispy aayi kittum. | |
